Summary & Motivation
Project Initiator: ATS Food Technology Group Start Date: 2005 Projected Completion Date: Not applicable Current Status: Testing stage (Waiting for proper laboratory equipment) Many rural farmers currently preserve milk by allowing it to become soured (Known as mafi in Sesotho). While this technique does allow the dairy product to be kept for a longer period, the taste is markedly degraded. ATS is looking to develop a method for household yoghurt production so that community members could produce a tastier dairy preserve. In addition, this yoghurt could be marketed to the local community.

Specifications
- Low cost
- Does not need constant refrigeration or incubation
- Longer lasting than standard milk
- Better tasting than soured milk

IssuesATS has managed to create a few intial samples of yoghurt which is edible using an incubator and refrigerator. Continued testing is needed.
Help is needed in the following areas:
- Testing the pasteurization and bacteria introduction process designed by ATS.
- Evaluating the issues associated with allowing yoghurt to be kept with refrigeration.
