Senior Barbecue
Instructions:
- make a sign-up sheet
- before you shop see how many people are signed up
- MAKE A SHOPPING LIST!!
- Find someone with a car and a few hours on their hands.
- Good luck.
Meat:
- 1 lb. rib-eye steak per person (buy a big slab at Hilltop Butchers in
Saugus and have them cut it into 3/4 inch steaks)
- 1/2 lb. chicken breast per person (big bags at Hilltop)
- huge bottle of barbecue sauce
Chicken Marinade (night before):
- bottle Italian dressing per five pounds of chicken
- cut breasts in half
- remove excess fat from chicken
- turn pieces in tub of Italian dressing and marinate over-night in
fridge
- cook on grill, basting with barbecue sauce and turning often.
Steak Marinade (night before) (approximately 1 recipe per 6 lbs steak):
- 1 cup soy sauce
- 3/4 cup water
- 4tbs. Sesame Oil
- 1/4 cup ground sesame seeds
- black pepper to taste
- little less than 3/4 cup sugar
- 3 onions (thin strips)
- 1 bunch of scallions (minced)
- 5 large cloves (not heads!) garlic (minced--easier to buy pre-minced)
- 1/2 square inch of ginger (minced)
- mix it all together!
- dunk in water for an hour or two
- turn pieces in tub of the stuff and marinate over-night in fridge
- cook on grill
** idea--cook some mushrooms in tinfoil on the grill with some of the
marinade!
Potato Salad (this recipe serves twenty):
- 10 lbs. potatoes
- 4 cups mayonnaise
- 8 ounces miracle whip
- 2 large green onions
- 1 1/2 tsp. sugar
- salt
- pepper
- 12 eggs
- boil potatoes (unpeeled) until soft (can stick fork into potato
easily)
- boil eggs until hard-boiled (10 minutes after eggs are in pot and
water is boiling.
- eggs and potatoes can be stored in fridge over-night
- peel potatoes
- cut into 1/2 inch cubes
- dice eggs
- chop green onions
- in a separate bowl, combine spices, sugar, miracle whip and mayo
- pour mixture into potatoes, eggs and green onions and mix well
Drinks:
A two-liter per three people (one diet, one sprite-type-thing).

Barbecue Stuff:
- charcoal
- lighter fluid
- foil
- aluminum bins for marinating steak and chicken
Other suggestions:
- bread and butter
- corn on the cob
Important shopping information:
- buy soy sauce, sesame seeds and sesame oil at oriental store
- buy steak and chicken at Hilltop
- buy veggies at Haymarket (much cheaper than supermarkets!)
- buy other stuff at Purity (note--don't attempt to pay with a check, its
a major pain in the ass)
