Chef Rolando Robledo (Clover Fast Food) and some of the other folks from the Clover truck will provide a hands-on introduction to knife skills. Through prep for a recipe we’ll invent that day, we’ll show you the basics: how to chop an onion, smash garlic, chop herbs so finely that the cutting board turns green, and (depending on what we can get our hands on) break down something gigantic like this,http://www.cloverfoodlab.com/?p=3572. We’ll also talk about how to hold a knife, how to use your knife to be efficient in the kitchen, and sharpen knives.
