Chez Maître Paul


What better way to whet our appetite for fine French dining than with some traditional French cuisine? In the 6ème arrondissement, just literally a corner away from the hotel, our first dinner was at Chez Maître Paul. This restaurant is a quiet and calm place that specializes in cuisine typical of the Jura and Franche-Comté regions of eastern France. The menu ranges from dishes like the montbéliard, a smoked sausage served with potato salad, or the veal sweetbreads with morel mushrooms to a number of chicken dishes, either in a sauce of vin jaune—a dry wine from the region that resembles sherry—or baked in cream and cheese.
