Now, this of course is clear, clean masculine prose addressing the difficulties of the basic souffle. I think you should have included some of the warnings about not opening the door of the oven too often, and not making too much noise while the souffle is rising, but this is not a bad selection. It shows the non-ego-centric style of the great chefs, even in such a simple matter... I'm glad to see that you are trying to address writing issues, Tom.
