1: 1.5 cups water 3/4 cups sugar 1 cup rice flour 1 tsp. lye solution Combine sugar, lye and water and bring to a boil. Cool Add to rice flour and stir until smooth. Pour into kutsinta molds (or any other mold, i guess!) and steam for 15 minutes. Serve with grated coconut. *Homemade lye solution- Burn wood until all turns to ash. Sift and save fine dust. Store in a bottle until needed. Before use, boil enough ash with an equal part of water and strain in a double thickness cheesecloth. Use the liquid as lye solution. 2: 1 k. white rice 1 k. malagkit 1/2 k. sugar 3 tbsps. achuete, soaked in water 3 tbsps. lye water Wash, then soak together white rice and malagkit 3-4 hours or overnight. Grind to make rice batter (galapong). Mix together the galapong and sugar, and stir until smooth. Add achuete water and lye water. Mix well. Fill greased kutsinta molds or muffin molds to 3/4 full, then steam for about 25 minutes. Serve with grated coconut.
