P U T O N G P U T I [This may be a bit time consuming with the rice, but I'm sure you may be able to improvise using rice flour, but you'll have to experiment with the rice flour to water ratio.] 2 cups rice, soaked and ground with 1 1/2 cups water 3 teaspoons baking powder 1 1/2 cups white sugar 1/2 teaspoon salt The ground rice should have the consistency of thick batter. Add to this the sugar, salt and baking powder. Mix thoroughly. Pour into puto moulds until each is 2/3 full. Arrange in a steamer and steam for 1/2 hour or until done. Insert a toothpick in each and if it comes out dry, the puto is done. Serve with grated coconut.
