Each slice of cheese can be placed on the grid to reveal the name of a type of cheese (Boursin, Gjetost, brynza, havarti, edam, camembert, derby, cheshire, mozzarella, fontina, gloucester, colby, jarlsberg, gammelost, manchego, mascarpone, brie, feta, cotherstone, tillamook, and gouda).

Once the slices have been placed, adjoining slices make new holes. Only reading letters in the full holes gets you KRAFT CHEESE BRAND NAMED FOR GIUSEPPE. That would be Giuseppe Pollio, the person for whom the POLLY-O brand of cheese is named.
