World-famous chocolatier Michel Richart lectures on chocolate science at MIT

  • Richart's lecture, held in room 34-101, was sponsored by the MIT Lab for Chocolate Science and MIT France.
  • As Richart explained, there are three different botanical varieties of cocoa bean: the Criollo, the Trinitario, and the common Forastero. Though Criollo and Trinitario make finer chocolate, both are comparatively hard to come by.
        • Attendees were given a variety of Richart chocolate samples. Richart's chocolate being distinctly high-end, the samples alone rendered the $10 price of admission a bargain.
