Angie's Outrageous Bannana Bread (From Sweet & Natural Desserts - East West Health Books) 1 cup unbleached white flour 1 cup whole wheat pastry flour, sifted 1 1/2 tsp. non-aluminum baking powder 1/2 tsp. sea salt 1 tsp. instant grain coffee granuals dissolved in 1/2 cup water 1/3 cup corn oil 2/3 cup maple syrup 4 oz. soft tofu 1 tsp. vanilla extract 2 ripe bannanas 1/2 cup walnuts (optional, but worth it) Preheat oven to 375 degrees. Sift dry ingredients in large bowl. Blend liquid ingredients, bannanas, and tofu in a blender until smooth. Add liquid and nuts to dry ingredients and mix well. Place batter in oiled loaf pan and bake for 45 - 55 minutes or until a toothpick comes out clean when poked throught the middle of the loaf.
