Received 20:37:52 on 07/17/91, Posting # 39 ***** Subject: Strawberry Pie From: Jerome Grimmer From: mcrae@cs.ubc.ca (Valerie McRae) Thanks to the person who suggested a cream cheese layer - I made the most wonderful strawberry pie ever (and I make at least two per year) this past weekend: 1 baked pie shell -- (I use the home made piecrust mix from The Williamsburg Cookbook) 1 cup mashed strawberries heat to boil on small pan mix together 3 T cornstarch and 1 cup sugar -- add to strawberries - STIR CONSTANTLY until CLEAR and thick Put one thin layer of STRAWBERRY CREAMCHEESE OR STRAWBERRY NEUFACTAL (sp?) and line pie plate with strawberries -- use whole berries and fill all cracks with sliced berries, I lined the edges with halved berries. pour cooked berries on top - refrigerate - serve with whipped cream. simply, splashy and yummy! *****
