Chocolate Brownies l l/3 cups flour (i use white, it is lighter) l/2 teaspoon baking soda l/2 cup margarine, softened 3/4 raw sugar 3 TBS oil l (l0 l/2 oz) package tofu, i use soft. this is the stuff that is sealed in those cardboard boxes and has a shelf life of forever ;-) l/3 cup unsweetened cocoa powder vanilla extract - i don't measure, i just dump it in almond extract -"" "" "" " " but probably 3 TBS walnuts galore (i use probably a cup) l cup chocolate chips -semi sweet ............................................... combine flour and baking soda, set aside. combine margarine, sugar and oil in food processor and process 2 minutes or until light and fluffy. add tofu and process 2 minutes longer. add cocoa powder and process l minute. add vanilla and almond extracts and process a short time. add half of flour mixture and process until well blended. add remaining flour mixture and process again. pour into a bowl and add nuts and chocolate chips. pour batter into a lightly greased 8 inch square baking pan. bake at 425 for about 27-30 minutes. enjoy. .............................................. PEANUT BUTTER (VEGAN) ICE CREAM SQUARES l l/4 cups graham cracker crumbs (check for animal shortening!!!) 6 TBS margarine melted l/4 cup raw sugar l cup dry roasted peanuts, chopped (they can be salted, quite nice) l/2 cup light corn syrup l/3-l/2 cup chunky peanut butter l quart of vanilla ice bean or rice dream ........................................... in mixing bowl combine crumbs, sugar and melted margarine. press onto bottom of a 9 x 9 or 8 x 8 baking pan or dish. place in freezer for 30 minutes. meanwhile stir together 2/3 cup of the peanuts, the corn syrum and the peanut butter. stir the vegan ice cream to soften it. spoon half of the softened vegan ice cream over the chilled crust, and smooth out evenly over the crust. spread the corn syrup mixture atop the vegan ice cream. carefully spread remaining vegan ice cream over all the corn syrup mixture. sprinkle with remaining chopped nuts. cover and freeze till firm. let stand l0 minuts at room temp. before serving (i actually don't do that, i just take it out and have at it ;-) ) enjoy! both of these recipies are favorites of the flesh eaters i have served them to. they will never know. *****
