Grilled Portabellos with Miso Marinade ====================================== 1 lb portabello mushrooms 3 tbs red miso 1.5 tbs balsamic vinegar 3 tbs soy sauce 2 tbs water 1 green onion or a couple of chives (chopped) 1 clove garlic (pressed or minced) Combine marinade ingredients in a large container and blend thoroughly. Chop mushrooms as desired (I like to use 1cm thick slabs) and place in marinade. Let stand for ~30 minutes, recoating occasionally (I use a container w/ a lid and tumble it gently). Grill mushrooms until tender and slightly shrunken; turning and recoating with marinade as necessary to prevent drying. I also do these in my toaster-oven on a broiler pan (~400F) with good results. NOTES: Amounts are approximate - adjust to account for differences in your taste and ingredients. Miso, balsamic vinegar, *and* soy sauce can taste very different depending on brand. You can get miso at almost any Asian market and at Harvest Coop. I hope I haven't forgotten anything. Oh yeah, sometimes I like to add strips of Vidalia onion to the dish, marinading and grilling them w/ the mushrooms. Some kind of pepper might be nice too.
