You may substitute 1 cup whole wheat flour for one cup of the white flour if you prefer whole wheat pancakes, but you will have to be more careful if you do this as they will burn more easily. You may also leave out the eggs if you so desire, or use an egg substitute. You may substitute water or a milk substitute for the milk, though I do not recommend that you use water, I would rather you use milk or a milk substitute instead. Here's the recipe: Melt-in-your Mouth pancakes (my own modifications from McCall's Cookbook) 2 cups white flour 1 tablespoon granulated sugar 1 teaspoon salt 4 teaspoons baking powder 2 cups milk 3 tablespoons butter or margarine 1 egg combine dry ingredients in a bowl. Slowly add the milk, and mix. Add the melted butter or margarine, mix, and then add the egg. Fry in butter, margarine, or a little oil until bubbles that form pop and stay popped and edges become slightly dry, then turn once. continue frying for another minute or so (the pancake should be golden brown on top and bottom).
