POTATO AND CHEESE TACOS (12 tacos) 1 pound new or boiling potatoes, diced 3 to 4 Tbls. safflower oil 1 small onion, sliced 6 oz. farmer or mozzarella cheese 12 corn tortillas salt and freshly ground pepper to taste Salsa fresca, green tomato sauce, or cooked salsa (recipes to follow in a separate posting) For garnish: Alfalfa sprouts, shredded lettuce, sliced radishes, and/or sliced olives Steam the potatoes until crisp-tender, about 10 minutes. Heat 1 T. of the safflower oil in a heavy-bottomed skillet and saute the onion until tender. Add the potatoes and continue to saute until the potatoes just begin to brown, about 10 minutes. Remove the potatoes from the heat and toss with the cheese. Heat the tortillas in a dry skillet until flexible and fill with 2 heaping tablespoons of filling. Heat the remaining oil in the skillet and saute the folded, filled tortillas on both sides just until crisp. Serve immediately with the garnishes of your choice. -- Abort, Retry, Fail, Panic?
