Process: Heat oil. Add hing and seasonings, Fry onions and garlic. Add rest of veggies, some water. Mix thoroughly and bake at 350 F for about an hour till done. Garnish with fresh coriander and mint leaves. Masala Sambar Powder (this will keep for a while in a bottle. Recipe needs a couple of tsps) 2 cups dhania (coriander seeds) 2 cups red chilli pods 1 cup chana dal (split yellow peas) 1 tbsp methi (fenugreek) 1 tbsp sesame seeds 1 tsp saunf 1 stick cinnamon few curry leaves roast each separately in a fry pan with a touch of oil and grind fine in a spice mill. According to the author (Shyamala Parameswaran) "It looks elaborate but try it when you have a whole day to yourself. It is really worth the effort and becomes easier when you have the masala sambar powder already made. I haven't tried this dish but I decide to post it for several reasons: (1) It shows how really exciting vegetarian cooking can be. (2) It has some ideas in it that might be adapted to other dishes even if one doesn't prepare this dish exactly. (3) This is the sort of dish (including explanation) that I would serve to impress carnivores as compared, say, to fake meat.
