Grilled Peanut Butter Sandwiches ================================ Something else I've done a few times, which has nothing to do with being low fat (sigh) is a variation on something that a friend of my mom's did back when they were (again, sigh) campaigning for McGovern. She made "grilled peanutbutter sandwiches". I made up this variety based on that idea; I've used this both for lunches when I want to treat myself (yum!) and for a dish at a brunch pot-luck with mostly vegetarians. Substitute "margarine" where I've written "butter", if you like. Saute some raw sesame seeds in butter till they're a bit browned (don't burn them.. easy to do, bad situation..), and drain as much fat as possible. Spread peanut butter on two slices of wheat bread (pepperidge farm seven grain is great!). Drizzle some honey over the peanut butter on both pieces of bread. Slice up a banana (more or less) sorta thinly and cover one of the piecea of bread and put the two pieces of bread together. Put butter on the outside of the bread slices, and grill them in a skillet as for grilled cheese (sorta slowly, so the whole thing heats up inside). When both sides are golden and the whole thing is hot, quickly open up the sandwich and spread the sesame seeds over the bananas. It won't open up perfectly, and it doesn't matter. Close up the thing, press it a bit, and eat, preferably while it's hot. When I did it for the pot luck, I cut it into rectangles.
