Just thought I'd share a very successful sandwich attempt with you all. This requires some preparation time (20-30 min?), but is well worth it. I imitated a sandwich on the California Pizza Kitchen menu. Roasted red pepper, hummus, and basil leaf sandwich --------------------------------------------------- 1 med sized focaccia bread or crusty-loaf white bread Olive oil 1 pkg hummus A couple fresh red peppers, sliced with seeds & stem removed fresh basil leaves Salt Various herbs: oregano, dried basil, marjoram, rosemary, tarragon, etc. Directions ---------- If you have ready-made focaccia bread, heat it in the oven (~350 degrees) while you are cooking up the peppers, but make sure it doesn't burn. If you are making your own focaccia, take your loaf of bread, slice it in half. Then put a little bit of olive oil on the top crust, and sprinkle on your choice of dried herbs. You might substitute margarine or butter for the olive oil on the crust. The oil gives flavor and helps the herbs to stick. Anybody got any low-fat suggestions? Put this in the oven, and heat. Heat some olive oil (1 T or so) on medium high heat in a saute pan. Put in the red peppers. Saute' until their texture changes from crisp to slightly tender, but not mushy. Their color should change a little, too. Add salt to taste. When the peppers have reached the slightly-tender-but-not-mushy stage (aficionados will know what I mean) then add the basil leaves, and saute' until they just barely begin to wilt. Take the bread out of the oven, if you haven't already, and spread a generous portion of hummus on it. Top with red pepper/basil mixture. Enjoy! Laura elsiedee@mit.edu VSG-RECIPE VEGAN
