It also, incindentally, provides complete protein, and almost nil fat. Easy stew ********* take: -- a small handful of lentils (be careful: they expand!) -- -- a handful of rice -- -- salt -- rinse them in cold water add water; rice usually absorbs its volume of water, and lentils many times their volume. heat to boil, keep covered on very low heat, 40 minutes to an hour. To cut down the time, you can use red lentils, which are smaller (you can find them at a Co-op). Make sure there is enough water. Near the end, add -- a couple of your favorite vegetables -- If you don't mind using frozen vegetables, they're much quicker. They taste OK, but I know not what is involved in their processing. For example, green beans and corn are very good. Carrots too. You can add anything else you fancy; coconut or raisins, maybe. Add -- your favorite spice -- For example, curry powder. If you're a gourmet, you can fry some onions first, add the spice to that, and then add to the stew. Let stew for a little while. ********
