Subject:     Taco Fest part 2--The sauce recipes

SALSA FRESCA
  (1 1/2 cups)
3 medium ripe tomatoes, minced (1 pound)
1/2 small onion, minced
6 sprigs cilantro, minced
2 serrano or jalapeno peppers, minced
1/4 cup red wine vinegar
1/3 cup water
salt to taste
 
Mix all the ingredients; serve, or chill and serve.  This is best served
very fresh, but it will keep for two days in the fridge.
 
 
GREEN TOMATO SAUCE
   (2 cups)
This sauce isn't made with _green_ tomatoes per se, but with the Mexican
variety, which have a sweet flavor all their own.
3/4 pound Mexican green tomatoes (tomatillos)
2 serrano peppers
1 clove garlic, peeled
1/4 medium onion
salt to taste
2 tsp. safflower oil
 
Remove the papery husks from the tomatillos and place the tomatoes in
tha saucepan.  Cover with water and bring slowly to a boil.  Boil gently
for 10 minutes, or until soft.
Meanwhile, roast the peppers over a flame or in a dry skillet until they
blister.  When cool enough to handle, remove the stems.
When the tomatoes are soft, drain them and blend all the ingredients
except the oil in a blender until smooth.  Heat the oil in a
heavy-bottomed skillet and cook the sauce for about 5 minutes over
medium heat.  Serve.
 
 
COOKED SALSA
   (1 1/2 cups)
1 1/2 pounds ripe tomatoes
1/4 medium onion
1 clove garlic
2 jalapeno or serrano peppers
1 Tbls. safflower oil
salt and freshly ground pepper to taste
 
Heat the broiler and broil the tomatoes until blistered, turning to
broil on all sides.  This should take about 10 minutes.  Meanwhile, heat
the peppers over a flame or in a dry skillet until they blister.  Remove
the stems when cool enough to handle.
Blend all the ingredients except the oil together in a blender until
smooth.  Heat the oil in a skillet or heavy-bottomed saucepan and add
the puree.  Cook over a medium flame for 15-20 minutes, or until the
salsa reaches a thick consistency.
