Garrett This is one of my favorite things to do with tempeh. Tempeh Fajitas Marinate the tempeh in a mixture of Narajana Agria (bitter orange juice - available in the Spainish section of your ethnic supermarket, or use some regular OJ in a pinch) Splash of _GOOD_ soy sauce Touch of olive oil, to give it body LOTS :) of freshly ground pepper Don't actually soak the tempeh in the marinade, brush it on thoroughly. Build a big fire. Cut up bell pepper, onion, celantro and jalopenas Wrap up several packets of this in aluminum foil. This is going to be the fajita fixings. Wrap up the tortillas in groups of five or six in foil. When the fire is good and hot, put on the packets of vegs, torts and the tempeh. The packets need to be flipped fairly reguarly to prevent scorching. Be vary careful flipping the tempeh to avoid breaking it. The tempeh is done when it's browned a bit. Take this all inside, cut the tempeh into strips, and assemble the fajitas, with sour cream if it is not contrary to your life's doctrines. The fajitas go great with Fiery Red Head Pico de Gallo (the firey red head is my so) IN large mixing bowl, combine chopped celantro red onion lime juice tomatoes serano pepper This is guaranteed to top off any fajita. Hope all this made sense. BTW, when I say fire, I mean in a barbecue pit. But don't use lighter fluid, it helps to deplete the ozone layer. Also there will probably be alot of fire left over after the tempeh is cooked. Throw some foil wrapped potatoes and onions on the fire for about an hour. Turn every 20 minutes if the fire is very hot. Makes great leftovers! :) Bill R.
