I recently got a food dehydrator, and one of my first
goals was to get a tolerable tofu jerky for camping.
Now I think I have the start of a good recipe, so I'm
posting to get hints from anyone else who might have
tried this.

The method I've tried is:

Get VERY FIRM tofu ( I use Bean Mountian brand- it's
so firm that it is almost impossible to mash
with a fork for tofu burgers.)
Slice into 1/8" slices
Marinate in a soy, garlic, etc. marinade for about
three hours (I'm going to try a vinegar
	barbecue sauce next time..)
Put in dehydrator at about 130 (F) for about 6 hours

Mine turned a nice jerky-like brown and was more chewy than
crunchy - maybe I should dehydrate longer - but tasted
quite good. A commercial version I have seen looks as
if the tofu has been mashed and pressed into shape, so
maybe that works, too.
The same theory would probably work in an oven at low
heat; I haven't tried that.

Becoming a happier camper..
Eileen
