Subject:     VEGAN Scones

here they are, i have veganized them and they have not suffered too badly.
 
3 l/4 cups    all purpose flour (i use white)
4 tsp         cream of tartar
2 tsp         baking soda
l tsp         salt (optional)
6 TBS         margarine well chilled
l cup         golden raisins
5 TBS         raw sugar
l cup appx.   soy milk
l tsp         baking powder

plump the raisins in hot water, drain and squeeze excess water.
 
preheat oven to 425 degrees
 
combine flour, cream of tartar, baking soda, baking powder and salt in
large bowl.  cut in margarine or blend in with fingers (this is what i do)
until it resembles coarse meal.  stir in raisins and sugar.  mix in enough
mild to form soft but not sticky doug.
 
turn dough out onto lightly floured surface and knead gently until dough
holds together.  roll dough out to thickness of l/2 inch.  cut out rounds
using 2 inch cutter (push straigh down, do not twist).
 
arrange rounds on cookie sheet that has been floured lightly.  dust tops
lightly with flour.
 
bake scones until puffed and golden about l0 minutes.  serve immediately with
margarine and jam.  i actually just use some marg or just plain.
 
these are really wonderful. btw, i use vanilla flavored edensoy soy milk or
sometimes instant soymilk.
