BTW, where is everybody, anyway? Vegetarian Meatballs To 1 1/4 cups cracker crumbs add 1 small onion, diced, 1/4 teaspoon sage, 1/2 cup finely chopped pecans, 6 eggs (5 if large) or an equivalent amount of similar substance, & 1/2 cup cream cheese. Mix well and add salt to taste. Then drop by teaspoonfull into hot vegetable oil and deep fry until golden brown. If the insides are not quite done when the golden brown stage is reached, then you should either reduce heat or once all meatballs have been deep fried, microwave for 1 minute. To make the sauce, sautee 1 small onion and 1 small celery in a small amount of oil (I use what I deep-fried the meatballs in) until tender. Add the meatballs and 3 cups tomato juice or 3 cups tomato soup or 2 cups tomato juice+1 can condensed tomato soup to the sauteed vegetables. Personally I prefer using 3 cups tomato juice. Cook until the sauce is nearly gone. Note that the reference to "an equivalent amount of a similar substance" in the sentence referring to eggs is for those of you who do not use eggs, and as there are nearly as many egg substitutes as there are vegetarians, each person would have his/her own favorite. 5 large eggs has a volume of approx- imately 1 cup.
