Wild rice with mushrooms and pecans 2 cups rice triology (this is a mixture of brown basmati, another brown rice, and wild rice--I bought it at Trader Joe's in CA) 1 bunch green onions sliced (whites and greens) 6 cloves garlic minced 1-2 cups white mushrooms sliced 1/2-1 cup pecans coarsly chopped 1-2 TBLS olive oil Salt and freshly ground black pepper to taste Cook rice according to directions. When rice is nearly done, saute onions, garlic, and mushrooms in olive oil. Add to rice along with salt, pepper, and mix together. Add pecans just before serving. This mixture can also be used to stuff a squash (in place of a turkey). Just bake the squash til tender, then stuff it and stick it under the broiler for a minute or two.
