Thinly slice the onion. Heat the oil, add the onion and cook over med-high heat until almost translucent. Add the zucchini and cook quickly, stirring constantly. When zucchini are done to your taste [I like them a little bite-y], sprinkle with cheese and black pepper little bite-y], sprinkle with cheese and black pepper.
