Received 01:42:59 on 03/27/91, Posting # 13 ***** Subject: Zucchini Noodles From: Jerome Grimmer I picked this recipe up off of the listserv list GRANOLA, and thought it would be appropriate to post it here. -----------BEGIN GRANOLA POSTING------------ From: tamar more for a cold summer dish that you can eat for days, takes maybe 15 minutes of preparation: cold noodles and zucchini with seseme cook as many noodles as you think you'll be able to consume in the next week. i think soba (buckwheat) noodles are best, but regular spaghetti is fine too, or you can mix them. while they cook, pour a spoonful of oil (seseme or olive) in a pan and add in about half a cup of seseme seeds. if you don't turn the heat up too much, you can chop the zucchini as the seseme starts to fry. anyway, slice up a few zucchini and summer squash (2-3 small ones for a pound of noodles) and add to the seseme seeds. stir them occasionally and fry to whatever level of done-ness you like them. make a sauce from tamari, vinegar, water, a little oil, and white miso (adjust to taste, make about half a cup to a cup of liquid for a pound of noodles). mix the zukes, noodles, and sauce. add some scallions, cucumber, salt and pepper and maybe some ginger. ------------END GRANOLA POSTING----------- Jerome Grimmer ap429@cleveland.freenet.edu -- Abort, Retry, Fail, Panic?
