Here's something else to do with those black beans: GALLO PINTO (recipe from Costa Rica) Ingredients: 1 medium onion, minced 2 cloves garlic, minced 1/2 stick margarine OR 1/4 c oil 2 1/2 cups white rice, cooked 2 1/2 cups black beans, cooked Salsa Lizano or other seasoning, to taste Heat oil in a heavy frying pan, cook onion and garlic until soft. Add beans and fry for 10 minutes. Add more margarine or oil, if needed. Add rice, stir well and cook for five more minutes. Season with the hot sauce and serve. This is a staple of Costa Rican kitchens, usually served at breakfast with tortillas, hard cheese and scrambled eggs. May also be served as a side dish with any other meal.
