As a high level schematic, this looks really good. I have no doubts you can make a usable guest experience by continuing down this route. Is there any way to adjust sensitivity on the capacitive sensor? This may be something you want to consider.

I'm also not an electrical engineer! But the diagram looks cool. Have you guys thought about having force sensors instead of touch sensors? It might reduce the chances of overloading. It sounds like if you have touch sensors, when players are moving between jelly beans, you might have too many of them lit up.

The design for the jellybean rock wall electronics is detailed and clear. My one concern is the sensitive touch sensors reading false positives. Perhaps you could put a timer such that the player has to hold the block for a certain number of seconds before it reads a positive (e.g. 3 seconds). Otherwise, great job!
