Healthy Summer Snacks

Summer officially begins tomorrow! Enjoy the summer season and the long awaited
warm weather by enjoying some new healthy summer snacks and re-discovering some
old favorites.
Here are some tips and recipes for you to try:
Create a FRUIT SALAD with seasonal fruits --- include strawberries, blueberries,
grapes, kiwi, watermelon, and any other fruits you like. The more colorful,
the better! Even people who "don't like fruit" like a great fruit
salad. You can also top it with a dollop of lite whipped topping and serve it
as dessert.
Make some HOMEMADE POPSICLES -- you can use regular or sugar-free lemonade
or any other favorite juice. You can purchase popsicle freezer trays at any
of the large kitchen and bath stores. Enjoy!!
Try freezing GRAPES OR BANANAS -- the grapes should be rinsed and dried first
and the bananas should be sliced. Let them freeze until they are at a consistency
that you like. They make delicious snacks - especially on hot days!
FRUIT SMOOTHIES -- here are some recipes to try:
Fruit Smoothie
1 cup nonfat plain or flavored yogurt
1 cup ice
1 cup fresh fruit
1 tablespoons sugar (optional)
Combine all ingredients in a blender and process until smooth. Serve immediately.
Try different fruits and flavored yogurts for different flavor combinations.
Cranberry Raspberry Soy Smoothie
1 cup vanilla soymilk
½ large banana
2 Tbs frozen cranberry juice concentrate (undiluted)
1/4 cup frozen raspberries
Place all ingredients in blender and puree until smooth. Serve immediately
or refrigerate.
