Problem:

As clued by “cheesy” and “dough” in the flavortext, the eight-sector circles represent pizzas. In each circle, you can find three pizza toppings reading clockwise or counterclockwise, without using any letters more than once (unless they appear more than once). There are two unused letters for each circle.

Numbering the wedges 1 to 8, starting from the top and proceeding clockwise, the starting sectors and directions for the toppings, and unused letters and their positions, are:
