An early focus of the Program was the endogenous formation of N-nitroso compounds, which had arisen in turn from an interest on the formation of nitrosamines in nitrite-preserved foods. This led to experiments concerning the endogenous formation of nitrate in humans. A surprising and major source of nitrate turned out to be the conversion of arginine to nitric oxide by activated macrophages, which has led to the continuing effort to elucidate the complex chemistry of nitric oxide itelf and of the many oxidation products that arise from it.
