The employees start preparing for closing the store well before the evening is over. As soon as the last shift arrives, sometime around 2:00pm, they start going through the pre-close routine. They move the syrup off the counter, take away the grates and begin sanitizing everything with a dishwasher behind the counter. They start pre-close early because they never know what the evening crowd is going to be like.
