Weekly assignment
- For this class we will be making guacamole, salsa, make your own hot sauce, and cheese quesidillas.
- Take a look at the Guacamole recipe and the recipe for Salsa

- Three papers: pigments in Avacados, and capsacian content in peppers, These papers were picked as examples of current reasearch on avacados and peppers. For your perspective, the introductions and the discussions are the most interesting part of the papers, so focus on those two sections. The third paper, describes how a mouse without the capsicum receptor was made . Here is the original paper that describes the Scoville test.

- Name three pieces of scientific equipment that were used in the reserach papers that you read.
Guacomole questions:
- Is the avacado a fruit or vegetable? What makes it unique in this respect?
- Why does guacomole turn brown?
- Provide a chemical explanation how we can prevent the browning of the avacado.
- Why do apples turn brown? Is this the same mechanism as avacado browning?
- How can we prevent the browning of fruits and vegetables?
- Why do onions make us cry?
- How can we ripen the avocados quickly?
- Once the avocados are ripe, how can we extend its shelf-life?
- What is the name of the pigment in avacados which has been attributed to have health benefits?
